A smooth, rich gin that replicates the creamy, buttery texture of Cornish oysters!

"Daring" is named after the ship name of the schooner "Salcom Fruiter" built for the owners based in Padstow, a town on the north coast of Cornwall, England. rice field.

Developed in collaboration with Michelin-starred chef Paul Ainsworth, this is a limited edition product, and only 132 bottles have arrived in Japan!

Inspired by Paul Ainsworth's popular dish 'A Tale of Porthilly', it uses whey and Cornish botanicals to capture the beauty and ruggedness of the Cornish coast.

<tasting notes>
NOSE: Rich, buttery scent. Fresh and fragrant fennel, seaside herbs and warm allspice.
PALATE: Soft and mild mouthfeel. Sweet licorice flavor and refreshing flavors of fresh lime and blood orange. The umami of oyster leaf is added there, and the balance with the earthy angelica is wonderful. Ingredient whey provides a buttery smooth mouthfeel, perfectly complementing the soft citrus and warm spices.
FINISH: Citrus acidity, followed by the warmth of green cardamom and anise.

<liquid profile & botanicals>
Create a base spirit with milk whey to recreate the rich, creamy texture of Cornish oysters in Paul's popular dish 'A Tale of Porthilly'. Using whey from the same 'Briddlesford Dairy' that he uses to make the butter he serves at his restaurant 'Paul Ainsworth at No6', he makes a base of milk vodka, then uses a British small Blended in a 65:35 ratio with wheat-based grain spirits, Daring's smooth, rich base spirits are created.
The blended base spirit is combined with 14 carefully selected botanicals, including fennel, Cornish apple, seaweed, blood orange and fresh lime, then one-shot distilled to create the perfect balance of flavors. Blended with separately distilled oyster leaf and seaweed distillates for
